Variants are the versions of a service customers pick from, each with its own length and price. A “Haircut” might have “Adult — 45 min” and “Child — 30 min”. Every service needs at least one variant, because the length and price live on the variant, not the service. Open a service from Settings → Catalogue → Services, then select Duration & Price.

Drag variants to reorder them. The order here is the order customers see. The first variant is the default.
The tax rate comes from the service and applies to all of its variants. You set it when you create the service.
